General Question About Mythology

I don’t have a specific event or person to ask you about, I’m just wondering about Native American culture and beliefs, specifically Central American Natives. Who are their deities and how do their beliefs impact their culture? Did they go on the conventional concept of a god, as in are they actual entities or more just concepts? I’m really curious because it’s not exactly something you’ll find in any high school history book.

There are several ways to approach your question. Someone here may be able to give you a very good answer, but you may also try /r/Askanthropology since your question includes insights that can be gained from sources other than the written record.

In general, I try to avoid the term "mythology" for Native American traditions and beliefs systems - because those traditions are often still living or were vibrant within living memory. The term "mythology" can be taken as judgmental. Consider the difference between referring to the Christian Resurrection "story" as opposed to the Christian Resurrection "myth": the latter immediately casts belief into the realm of ridicule.

I once had a Native American grad student in anthropology in one of my Intro to Folklore classes, and another student innocently asked about Native American mythology, and I asked the grad student how she felt about that term. She said she found it insulting because her parents were still active believers in that tradition. Nothing wrong with your question - simply something to consider.

On the issue of the term "god/gods": this word complicates things because the Abrahamic religions have an omniscient/omnipotent/omnipresent deity, and it is difficult to separate that concept from the word "god" when used in reference to polytheistic traditions and belief systems. Even monotheistic religions have powerful supernatural beings other than the "one-true" God: angels, Jinns, saints, ghosts, and many others represent lesser supernatural entities.

In polytheistic belief systems, there can be an array of more or less powerful supernatural beings, but usually there is not one that rises to the level of the Abrahamic God, although sometimes there is a vague concept of a detached entity that has the role of prime mover. For those belief systems - and this includes Native American traditions in general - applying the term "gods" must be done with the understanding that the powerful supernatural entities almost always have limits that are not implied by the word "god."

An expert either here or from another subreddit may be able to address your specific question about Central American indigenous traditions, but in general, seeking "the conventional concept of a god" must be framed with the caveats outlined above.
