For fiction you should watch Bloody Sunday (2002) and Hunger (2008). '71 is pretty interesting too as it shows the early years of the Troubles as well as some of the factional struggles.
BBC recently did a few brilliant documentaries. Spotlight on the Troubles and Scotland and the Troubles are both excellent.
In the Company of Men (1995) is a three part documentary following a company of the Welsh Guards in early 90s NI.
I haven't seen it yet but Unquiet Graves (2018) is meant to be well worth a watch. I'd also recommend anything Peter Taylor did on the Troubles.
