What was life like in the Galicia region of Austria-Hungary for the average Pole?

For example, what foods did they eat, what celebrations did they participate in, what were their political beliefs, etc.

Are you asking specifically about ethnically Polish people from Galicia, or in general about people from Galicia? I ask this, because in my language (Michif) we use the term GalisyaeƱ to refer to Ukrainians, as the largest part of the Ukrainian immigrants to the Canadian west originated from the province of Galicia in the Austro-Hungarian Empire, where they celebrated either Ukrainian Orthodox holidays (by the Julian Calendar) or Ukrainian Catholic holidays (by the Gregorian Calendar) and ate pretty much all the classical "Ukrainian" foods like perogies, cabbage rolls, Kovbasa, and so on, while reciting the poetry of Taras Shevchenko, dancing shumka and telling epic Ukrainian poems.

I think you need to narrow your question a lot - specify a time and maybe just one or two topics, as this one is infinitely broad.
