Were there stories (apart from the Iliad and the Odyssey) about Minoans and the Mycenaeans? What did they know or say about them? What about stories about the Minoans and the Mycenaeans from the surrounding civilizations in the Mediterranean?
The ancient Greeks had no idea about the ancient "Minoans" or "Mycenaeans" (both are archaeological labels; they are definitely not ethnic labels of any kind). They came across structures and objects from the distant past (what we now refer to as the Bronze Age), but had no idea what they were. They instead created stories about them.
