Of those books you've listed, I recommend Diarmaid MacCulloch's A History of Christianity: The First Three Thousand Years. It's a very readable overview of a vast amount of history that goes from antiquity to the present. Unlike many similar accounts it looks beyond Western Europe and gives attention to Orthodoxy and African Christianity. I've used the book in teaching undergraduates, who have generally responded positively to it.
Paul Johnson's History of Christianity covers much of the same history. Written in 1976, it's not necessarily up to date in all respects, and more pronounced in its focus on Western Europe. It's also about half the length of MacCulloch, and consequently less in depth.
Many of the other books you've listed are far more limited in scope. Bart Ehrman's The Triumph of Christianity is about the spread of Christianity in the Roman Empire, as is Rodney Stark's The Rise of Christianity. Both of these are informative books, but they cover far less chronology than MacColloch.
If you're looking for other surveys of Christianity, I've heard good things about Justo L. Gonzalez's two volume The Story of Christianity. It's often used in church history courses in Protestant seminaries. There is also an older series, The Penguin History of the Church, that is worth looking into. The first volume The Early Church by Henry Chadwick is a readable history of some complex theological and ecclesiastical controversies.
Christianity is a big subject though. It might help to focus recommendations further if you had a specific area, historical period, or Christian group you'd like to learn more about.
