What was the cuisine like in Medieval Europe? Specifically, places like Italy who's modern cuisine relies heavily on things from the Americas such as tomatoes.

More answers remain to be written. There are other threads about Italian food before 1492 in the subreddit FAQ, but many European countries benefited from the introduction of New World foods.
