The Chinese did eat bread. Refer to my earlier related answer here. Bread and other wheat products were extremely common in Northern and Northwestern China. Bread, noodles, and various baked or boiled products made from wheat and barley were enjoyed by not only the Chinese, but the regional Turkic and Iranian peoples of the diverse Tang Empire. White bread was reserved for the elites, while whole wheat breads were for the working classes.
