I wrote about cannibalism during the crusades in a previous post, so hopefully that helps answer your question. Very briefly, it might just be a macabre joke, not something that actually happened. But they could also justify it (or at least justify it within the context of the joke) because they were eating Muslims, not Christians like themselves.
