Good literature about Nazi occupation policy?

The NS occupation policies are all over the place, even the plans for "eastern colonization" did change. Can you recommend literature which gives an overview about all of that?

It's hard to give a full list without knowing what languages you read, but I'll give you a list of the best books I know in English and German, some of which focus on specific areas and others which are more general in scope.
