I'd like to begin by asking if the books series on Imperial China part 1 through 6 is a good start for learning about Chinese History. If not, what book or book series would you recommend for a beginner in the subject such as I. Also interested in Vietnam, Cambodia, Thai and Korean history if you could recommend something.

Yes, it is excellent. All of the volumes are written by leading people in the field, and all very well done. I would highly recommend any of them. They were all well reviewed.
Note however, that they are all written by professional historians, and so there is a lot of social and cultural history. If you are looking for a detailed narrative of every ruler and battle..this is not the place. You can see the tables of contents as well as excerpts from reviews at the link above.
