What was life like in the Crusader States? Particularly, what was life like for Muslims, Jews, and non-catholic Christians?

For non-Catholic Christians it was pretty good. There was a bit of discrimination against them, but for the most part they could fully participate in crusader society. For Jews and Muslims it was not so good - the best case scenario was that the crusaders simply ignored them. They had fewer rights and opportunities in society. Worst case scenario, they could be enslaved or attacked/killed. I have some previous answers that go into much more detail:
