Would I as a historian be able to study specific cultures and the history of specific regions?

I've looked at a few history courses in my country and many of them are not written clearly in what you'll be actually learning and the definitions I've read imply more that history is about the study of events and specific people rather than cultures, languages and various groups of people. My country doesn't have an archeology course running at any uni I've looked at and I'm confused, as the definitions I've read imply that archeologists are the ones who deal with cultures.

It really all depends on what courses you are going to study. Most courses will outline what exactly will be studied throughout. As you progress further and further along your academic studies you will have more and more freedom. Some history courses focus not on historical periods or cultures but actually the study of history itself. How to research, how to write, how to engage with sources etc. Any university degree should outline exactly what it teaches.

Can you choose certain modules and/or classes on the course you’re looking at?

As u/upsafetynextchapter already said, the further into academic study you go the more you can narrow your focus. For example, an acquaintance of mine wrote an entire PhD thesis about combs!
