Why, during WW2 / D Day and Normandy Beach landing did the troop carrier land face on and not at an angle or why weren't they designed with side hatches so guys wouldn't get mowed down as soon as the door opened?

Because any other direction is unnecessary hassle - opening out the back dumps the troops or vehicles into the water, which this whole exercise is supposed to avoid in the first place. Besides, landing craft are not just for combat landings; they're also used to put people, vehicles, and supplies on the beaches afterwards.
