How was bread so important throughout history even though it goes bad so fast?

How could it form a staple of so many diets in so many places at so many times when it’s so finicky, especially before the advent of modern refrigeration? Was historical bread actually much sturdier, and there’s just something different about modern bread?

because its not the bread that lasts long, its the ingredients, you could easely stock loads of them and could keep them for years

so while bread was a very important part of their diet, its really the grain that was super important, thats also the reason it was the first target of possible attackers, without the grain a city would fall

besides using bread just for food, medieval people often used it as their plates, known as trenchers, these were breads that were cut into thick flat slices Then others foods like meats or thick sauces would be served on top of them, once the meal was finished, the bread could then be eaten, or, if you were wealthy or generous enough, was given to the poor or to animals
