I am especially interested in the way their isolation affected them and possible changes in their lifestyle after returning to civilisation, bu I would much rather read more personal accounts than modern studies. A book that meets your requirements is Edward E. Leslie's 1998 study Desperate Journeys, Abandoned Souls. It is a popular history, rather than a strictly academic one, but it is the only one that I'm familiar with that compiles a significant number of studies of individuals, rather than large groups, stranded in such situations.
Leslie does cast his net wider than simply shipwrecked people and maroons; there are short sections on being left isolated in other settings, such as the North Woods and the Libyan desert. But the majority of his studies are focused in the area that most interests you.
